Healthy Vegetable Recipe – Zucchini & Mushroom Rounds

Who said eating your veggies couldn’t be fun? Too often we find ourselves eating the same old things when we’re following a diet. While that strategy has its advantages as long as the usual foods are healthy and balanced, variety does help break things up a bit.
These Zucchini Mushroom Rounds are full of healthy vegetables and taste great too. You can break the boredom of carrot sticks and get healthy at the same time.
Zucchini Mushroom Rounds
You’ll need the following ingredients:
- 4 ounces mushrooms, finely chopped
- 1 small onion, chopped
- 1 small zucchini, chopped
- 1 carrot, chopped
- 1 ounce unsalted peanuts
- 2 cups fresh breadcrumbs (go for whole wheat if possible)
- 2 tablespoons chopped fresh parsley
- 1 teaspoon yeast extract
- Pepper to taste
- Oatmeal for shaping
- 2 Tablespoons canola oil
Prepare as follows:
- In a large non-stick skillet (do not add oil yet) cook mushrooms for 8 minutes, stirring constantly to keep from burning.
- Place onion, zucchini, carrots and nuts in a blender and blend ingredients together just until they start to combine. Remove from blender and place in large mixing bowl.
- Add mushrooms, breadcrumbs, parsley, yeast extract and pepper to the blended mixture. Stir until completely combined.
- Add in oatmeal and mix well.
- Shape mixture into round disks about 2 inches thick.
- Place canola oil in large skillet and heat at medium for about 1 minute. Add rounds and cook for 10 minutes. Turn and cook approximately 8 additional minutes or until brown and heated through.
Enjoy!
Nutritional Summary – these rounds provide vitamins and fiber as well as some good fat (canola oil). Don’t substitute them for your daily salads and low-calorie vegetable servings.
