Vegetarian Chocolate Cake – Delicious and Healthy

While chocolate cake isn’t an everyday treat for most of us watching our weight, a little indulgence every now and then is essential. In fact, most experts agree that the occasional treat helps to keep us on track with our diet goals.
This recipe uses all vegetarian ingredients so it appeals to everyone. Enjoy your cake but remember… everything in moderation.
Vegetarian Chocolate Cake That Makes Your Mouth Water
Ingredients You’ll Need:
- 1/2 cup soft soy margarine
- 1 tablespoon vinegar
- 1 cup soy milk
- 1 2/3 cups all-purpose white flour
- 2/3 cup unsweetened cocoa powder
- 1 1/2 cups rice syrup
- 1 1/2 teaspoons baking soda
- 2 teaspoons Ener-G Egg Replacer
- 1/4 cup water
- 1 teaspoon vanilla
- 1/2 cup water
Preparation Instructions:
- Preheat oven to 350 degrees.
- Mix flour, cocoa, rice syrup and baking soda together in a large mixing bowl.
- Using a smaller bowl, mix egg replacement and 1/4 cup of water and stir until mixture becomes smooth.
- In a separate bowl, combine soy milk and vinegar together by stirring.
- Stir margarine, vanilla, vinegar and milk mixture and egg mixture into the dry ingredients.
- Using an electric mixer, beat on medium speed about 3 minutes.
- Spray 2 round cake pans with cooking spray and pour cake mixture evenly into both pans.
- Bake for 35 minutes or until inserted toothpick comes out clean.
- Cool slightly and then remove from pans to continue cooling until ready to frost. Use your choice of frosting or enjoy as is!
