One of my all time favorite dishes in the South is corn bread sopped up in some pot licker. If you make a pot of My Best Pinto Beans, be sure to add the bacon to make the best pot licker this side of Dixie. Every lady raised in the South knows how to mix up a good batch of pinto beans with bacon, and serve it with a big ol’ wedge of cornbread and a pile of mixed greens for good measure. I’ve been to many family gatherings in the South, and I’m constantly amazed at how many varieties of pinto bean dishes I find. I finally asked my neighbor lady if I could watch how she makes her pinto beans and she agreed, as long as I never made them for one of her potlucks. The instructions were precise and lengthy, but yielded the best pinto beans I have ever had.
